Todays Roasted Butternut Squash and Sweet Potato Soup.

Ingredients:
1 medium butternut squash, peeled, seeds removed, and chopped
1 large sweet potato, peeled and chopped
1 large carrot, peeled and chopped
Salt and pepper, to taste
60ml/2fl oz olive oil
1 onion, chopped
2 cloves garlic, chopped
1.5 litres/2 pints 13fl oz vegetable stock.
1 teaspoon cinnamon
1/4 teaspoon nutmeg
Salt and pepper, to taste
